Notes apps are wonderful at capture: they're already in your pocket, they search instantly, and jotting a recipe takes ten seconds. Where they fall short is the last mile: a note is not a book. There's no layout, no table of contents, no path to paper, and the folder labeled 'recipes to organize someday' stays exactly that.
